The chef and owner Chris McDonald offers some of the most accomplished and exotic dishes in Canada. First timers should order his 10 course-sampling menu ($120 and $170 with wine.) that deftly matches with various creative culinary delights. The menu constantly changes but among the mainstays are beef and duck bresaola, chilled beet soup with salmon and crème fraishe, homemade pancetta, tripe with chickpeas and squab breast. The desserts are equally imaginative and include items such as pluot (hybrid plum and apricot) with walnut shortbread and lavender curd.
The service is exceptional and the waiter explains each dish in full. Dinner is $150 per person with tip.
